CRAB CAKES
1 pound Dungeness crab meat
1/2 pound unshelled shrimp
1/2 cup cream or half and half
ground pepper to taste
1/2 cup finely diced green onions
1 egg
1/4 cup finely crushed bread crumbs
1 T. Dijon mustard
1 t. Worchestireshire sauce
tiny pinch Cayenne pepper (don't overdo it!)
olive oil for frying
Directions:
Remove any cartilage or shell that might have been left in the meat. Shell and
devein the shrimp. In a food processor add the shrimp egg, cream, mustard, Worchestershire
sauce, cayenne pepper and ground black pepper. Blend. Pour the mixture into
a mixing bowl.
Add the crab meat, bread crumbs and green onions, and mix thoroughly with a
wooden spoon. Shape the mixture into 10 cakes.
Heat 3 tablespoons olive oil in a nonstick skillet and add the cakes, cooking
over medium heat until golden brown - about 3 minutes on each side.
Serves 5 or 6, depending on the size of the cakes.
